1/4 c chopped green bell pepper
1/4 c chopped onion
1 clove garlic, minced
2 small zucchini (grate to make soup extra kid friendly*)
2 T butter or margarine
2 cans (10 oz. each) Cream of Potato soup, condensed
1 can (15 oz) cream-style corn
2 c milk
1 pkg (3 oz) cream cheese
1/4 t pepper
In a large pan, saute bell pepper, onion, garlic and zucchini in butter until tender. Stir in remaining ingredients and bring to a light boil, stirring frequently. Reduce heat and simmer, uncovered, 6-8 minutes or until cream cheese is melted. 6-8 servings. Can easily be doubled.
*leave the skin on when grating zucchini. This was tested on several children and they never even noticed it was in there!

Baked Spaghetti - Jill Walker
This recipe has been making the rounds with excellent reviews coming from everyone who has tried it. Easy and perfect for a large group (or for Compassionate Service - one for you and one to share)!
This makes two 9 by 13 or 1 extra large casserole dish.
1 pint sour cream
1 pint cottage cheese
1 8 oz. cream cheese
1 cup Parmesan cheese
12 oz cooked and drained spaghetti
2 jars spaghetti sauce
mozzarella cheese
12 oz cooked and drained spaghetti
2 jars spaghetti sauce
mozzarella cheese
Blend sour cream, cottage cheese, cream cheese and Parmesan together and spread in bottom of pan(s).
Place cooked and drained spaghetti on top of cheese and cream mixture. Cover spaghetti with sauce.
Sprinkle on mozzarella cheese. Cover loosely and bake at 325 degrees for 30 to 40 minutes.

Baked Ziti - RS Compassionate Service
1 lb dry ziti pasta
1 onion, chopped
1 lb lean ground beef
2 (26 oz) jars spaghetti sauce
6 oz provolone cheese, sliced
1 1/2 c sour cream
6 oz mozzarella, shredded
2 T grated Parmesan cheese
Bring large pot of lightly salted water to boil. Add pasta and cook about 8 minutes.
In large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce and simmer 15 minutes.
Preheat oven to 350°. Butter 9x13" baking dish. Layer as follows: 1/2 ziti, 1/2 Provolone, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with Parmesan.
Bake 30 minutes in preheated oven or until cheeses are melted.
